Ingredients

  • 1 cup (140g) Self-Rising Flour (or 1 cup All-Purpose Flour + 1½ tsp baking powder + ¼ tsp salt)
  • 1 cup (240g) Plain Greek Yogurt (whole-milk, strained, non-watery)
  • Optional Finish: 2 tbsp melted butter mixed with 1 clove minced garlic and fresh parsley
  • Extra flour for rolling and dusting

Instructions

  1. Make the Dough: In a medium mixing bowl, combine the self-rising flour and Greek yogurt. Stir with a wooden spoon or spatula until large clumps form.
  2. Knead: Turn the dough onto a lightly floured countertop. Knead gently for 2 to 3 minutes until a soft, uniform dough ball forms. If too sticky, sprinkle 1 tablespoon of flour.
  3. Portion & Roll: Cut the dough ball into 4 equal wedges. Roll each wedge into a round ball. On a well-floured surface, roll each ball into an even circle about 6 inches wide and roughly 4–5mm thick.
  4. Preheat Skillet: Place a heavy cast-iron skillet or non-stick pan over medium-high heat until hot. Flick a drop of water onto the surface; it should sizzle and evaporate instantly.
  5. Cook: Dust off excess surface flour and drop one pita into the hot, dry pan. Cook for 1 to 2 minutes until bubbles rise across the surface and the underside has golden blister spots.
  6. The Flip & Puff: Flip the pita. Within 30 to 45 seconds, the pita will inflate like a balloon. Cook for another 60 seconds until cooked through and nicely charred.
