A Brief History & Origins
The term Dolma originates from the Turkish verb dolmak, meaning "to be filled" or "to be stuffed." While the tradition of wrapping seasoned grains and ingredients spans the Caucasus, Central Asia, and the Levant, it was inside the imperial palace kitchens of the Ottoman Empire where dolma was transformed into high culinary art.
In Turkish cuisine, whole stuffed vegetables (like peppers and eggplants) are typically called dolma, while rolled leaves (grape vine or cabbage) are specifically known as sarma (from sarmak, "to wrap"). Today, both names celebrate a shared table of abundance, delicate spices, and fragrant olive oil.

Ingredients
- 1 jar (approx. 400g / 14 oz) preserved grape leaves in brine (rinsed and drained)
- 1 cup short or medium-grain rice (rinsed thoroughly)
- 1/3 cup extra virgin olive oil
- 2 medium yellow onions (finely chopped)
- 2 tbsp pine nuts
- 2 tbsp dried currants or raisins (optional, for sweet balance)
- 1/4 cup fresh dill (finely chopped)
- 1/4 cup fresh mint or 1 tbsp dried mint
- 1/4 cup fresh flat-leaf parsley (finely chopped)
- 1/2 tsp ground allspice & 1/2 tsp cinnamon
- Sea salt & freshly ground black pepper to taste
- 1 lemon, cut into thick round slices
- 1/4 cup extra virgin olive oil
- 1 1/2 cups warm vegetable broth or water
- Juice of 1 freshly squeezed lemon
Step-by-Step Method
