Home-Style Pointed Gourd & Potato Stew

Ingredients
- 10-12 Pointed Gourds (Parwal): Scraped/peeled, ends trimmed, and halved lengthwise.
- 2 Medium Potatoes: Peeled and cut into medium-sized wedges or chunks.
- 1 Large Tomato: Roughly chopped.
- 1-inch Ginger: Grated or finely minced.
- 1-2 Green Chilies: Slit lengthwise (adjust to heat preference).
- 2 tbsp Mustard Oil: Preferred for authenticity (or any neutral cooking oil).
- 1 tsp Cumin Seeds
- 1/2 tsp Turmeric Powder
- 1 tsp Coriander Powder
- 1/2 tsp Cumin Powder
- Salt: To taste.
- 2.5 to 3 cups Water: Adjust for desired stew consistency.
- Fresh Coriander (Cilantro): Chopped, for garnish.
- Kadhai, Wok, or deep saucepan

Prep the Veggies: Scrape the skin off the pointed gourds (or lightly peel them) and trim the woody ends. Cut them in half lengthwise. Scoop out any hard yellow seeds, leaving tender white ones intact. Peel the potatoes and cut them into chunks roughly the same size as the gourd pieces.

Temper the Oil: Heat the oil in your kadhai or saucepan over medium heat. (If using mustard oil, heat until it gently smokes, then reduce heat slightly). Add cumin seeds and let them sizzle for 10-15 seconds until aromatic.

Sauté the Aromatics: Add the grated ginger and slit green chilies. Sauté for about 30 seconds until the ginger is fragrant.

Cook the Base: Add chopped tomatoes and a pinch of salt. Cook, stirring occasionally, until the tomatoes soften, turn mushy, and the oil starts to separate.

Introduce the Spices & Veggies: Stir in the turmeric, coriander, and cumin powders for 30 seconds to release their flavors. Add the prepared pointed gourds and potatoes, stirring to coat them thoroughly in the spice mix. Sauté for 3-4 minutes on medium heat.

Simmer the Stew: Pour in 2.5 to 3 cups of water and salt to taste. Bring to a boil, then cover and lower the heat. Let it simmer for 15-20 minutes until the potatoes and gourds are fork-tender.
