For the Lamb Kofta Covering:
- One teaspoon ground cumin and 500g of ground lamb
- Ground coriander, 1 teaspoon
- Half a teaspoon of cinnamon
- One tsp of paprika smoked
- One teaspoon of salt
- Half a teaspoon of black pepper
- 1 tablespoon of freshly chopped mint
- 1 tablespoon of freshly chopped parsley
- One chopped garlic clove and a tiny, finely grated onion
- Four soft-boiled eggs that have been boiled for six minutes, cooled, and peeled
- One cup of flour (to dust)
- One beaten egg for covering
- Panko breadcrumbs, one cup
- For frying, oil
- Half a cup of Greek yogurt
- Half a teaspoon of chili flakes or harissa paste
- One teaspoon of lemon juice
- Half a teaspoon of honey
- To taste, add salt.
1. Make the Kofta Mixture:
- Combine all the kofta ingredients in a bowl and stir until thoroughly blended.
- Make a thin patty out of a part of the lamb mixture.
- Make sure to uniformly coat each soft-boiled egg by wrapping it around it.
- Coat each egg in flour, dip it in beaten egg, and then coat it in panko breadcrumbs.
- Fry in oil heated at 180°C (350°F) for 3–4 minutes, or until golden brown.
- Combine Greek yogurt, harissa, lemon juice, honey, and salt to make the Spiced Yogurt Dip.
- Cut the Scotch eggs in half to expose the yolk, which is still runny.
- Garnish with fresh herbs and serve with the spicy yogurt dip.
