Items needed for the chicken:
Directions- Four skinless and boneless chicken breasts
- Two tablespoons of olive oil
- Three tablespoons of honey
- Two tablespoons of Sriracha sauce (to taste)
- Two tablespoons of soy sauce
- One tablespoon of rice vinegar
- Two minced garlic cloves
- To taste, add salt and pepper
For Mango Avocado Salsa
- 1 ripe mango
- 1 ripe avocado
- 1/4 red onion
- 1/2 cup fresh cilantro
- 1 jalapeño (optional, for added spiciness)
- One lime's juice
- To taste, add salt and pepper
Get the Glaze Ready
- Mix the rice vinegar, honey, Sriracha, soy sauce, and minced garlic in a small bowl. Season with salt and pepper. This will serve as your chicken glaze.
- In a large skillet, heat the olive oil over medium-high heat. Add a little salt and pepper to the chicken breasts for seasoning.
- The chicken breasts should be cooked thoroughly and golden brown after 6–7 minutes on each side in a skillet with hot oil (the internal temperature should reach 165°F/75°C).
- After lowering the heat to medium-low, cover the chicken with the honey-Sriracha glaze. Simmer for two to three minutes, spooning the glaze over the chicken every so often until it thickens and coats it.
- put the chopped mango
- avocado
- red onion
- cilantro
- and jalapeño (if using) in a mixing bowl
- Add salt and pepper to taste
- squeeze the juice of one lime over the salsa
- Gently toss to mix
Put the Dish Together
- On serving dishes, arrange the glazed chicken breasts. Over each piece of chicken, spoon a liberal portion of the mango avocado salsa.
- For a full supper, serve the honey-Sriracha glazed chicken with quinoa, rice, or a simple salad. If desired, garnish with more cilantro.
Advice
- Modify the spice: If you like your salsa with less spiciness, cut back on the Sriracha or omit the jalapeño.
- Grill the chicken: You may alternatively grill the chicken rather than pan-sear it for a smokey taste.
- Make it vegetarian: To make it vegetarian, use grilled tofu or a vegetable patty in place of the chicken.
