Items needed for the chicken:
  • Four skinless and boneless chicken breasts
  • Two tablespoons of olive oil
  • Three tablespoons of honey
  • Two tablespoons of Sriracha sauce (to taste)
  • Two tablespoons of soy sauce
  • One tablespoon of rice vinegar
  • Two minced garlic cloves
  • To taste, add salt and pepper

For Mango Avocado Salsa
  • 1 ripe mango
  • 1 ripe avocado
  • 1/4 red onion
  • 1/2 cup fresh cilantro
  • 1 jalapeño (optional, for added spiciness)
  • One lime's juice
  • To taste, add salt and pepper

Directions

Get the Glaze Ready
  • Mix the rice vinegar, honey, Sriracha, soy sauce, and minced garlic in a small bowl. Season with salt and pepper. This will serve as your chicken glaze.

Prepare the chicken
  • In a large skillet, heat the olive oil over medium-high heat. Add a little salt and pepper to the chicken breasts for seasoning.
  • The chicken breasts should be cooked thoroughly and golden brown after 6–7 minutes on each side in a skillet with hot oil (the internal temperature should reach 165°F/75°C).
  • After lowering the heat to medium-low, cover the chicken with the honey-Sriracha glaze. Simmer for two to three minutes, spooning the glaze over the chicken every so often until it thickens and coats it.

To prepare the Mango Avocado Salsa
  • put the chopped mango
  •  avocado 
  • red onion 
  • cilantro 
  • and jalapeño (if using) in a mixing bowl
  • Add salt and pepper to taste 
  • squeeze the juice of one lime over the salsa
  • Gently toss to mix

Put the Dish Together
